Photos of What We Eat #5: Bantam egg omelette with roasted potatoes

Omelette with fingerling potatoes
Breakfast/Lunch, Tuesday morning

  • Omelette: Bantam (Banty) eggs (pastured), artichoke hearts, small amount of bacon (uncured Niman Ranch), onions (from our CSA), a few capers, small amount of mozzerella, a bit of tomato chutney, topped with fresh salsa.
  • Roasted potatoes: Fingerlings, garlic, and cipollini onions (from our CSA), rosemary (from our garden), extra virgin olive oil, butter, salt and pepper, hot sauce (for me).

This is not a typical mid-week breakfast for us, but we have guests visiting this morning so April made a heartier late morning meal. This will likely be the primary dish for breakfast and lunch today, with a mid-afternoon light lunch before supper. For supper with our company, we may recreate the grilled Albacore tuna dish from last week.

    @Christine: Yep, it was great. Unfortunately I wasn’t able to eat it right away so it sat in the oven for a while (ah, swimming lessons for our 4-year-old), but it was still excellent.

    @FBG: Ha, yes, that’s what we eat. And yes, my wife in my book is THE cooking god. :)

    Not only do you eat great the photos are amazing. I can’t try this for a little while longer because the potatoes and olive oil are not on my fat burning program. After I finish the first stage and get to coast this will be first on my menu.

    I’m not very good cook so anytime you want to share the recipes I would love it!!! I think I could handle this meal but would still love to have more detail. Maybe your wife could publish a Real Food Cookbook, think?

    I like it - potatoes & rosemary are great. Eggs look overdone and rubbery, but I am picky that way. :-)

    @Robin: We shall see on the recipe book…my wife cooks “by feel” so much that it’s hard to replicate recipes sometimes, so she’s a little nervous about the idea. ;)

    @John: Good eye John! As I mentioned to Christine above, I actually had to wait to eat this, so the eggs got a little overcooked waiting for me. We are actually fairly picky about eggs too - when the omelette was done, it was perfect. It was only me running behind this morning that messed it up.

    Boy, I better be careful - you guys know your stuff! :)
